1/3 cup of cilantro (keep some of the stems...they add a bit of a crunch)
1 small jalapeno (seeded and chopped finely)
1 medium tomato (seeded and not too wet)
Juice of 1/2 lemon (lime could be a substitute)
1 medium onion chopped finely
4 Haas avocados (the California kind not the Florida ones)
Salt and pepper to taste
Put all ingredients in a bowl and mash. Try to keep the citrus juice on the avocado to prevent browning.
If you add all the ingredients except the avocados, you will make pico de gallo, which is a nice fresh salsa.
